A mercenary company that is closely monitored by the governments makes a lot of sense. If you have multiple planets that are not controlled by one central government than you need to somehow control the "military" force that is outside of that. If you live on space stations / ships, you don't want to be tied to one government, cause if they go hostile on someone you lose the customers from them, can't enter their territory anymore, etc.
Also allows people to recognize "gun for hire" vs "gun that shoots anyone" from each other.

Really enjoying the sci-fi but not Gundam manga. Hope we don't see any mechas... I really don't like them in sci-fis.

In case you're interested in the actual mechanics of it, I tried to figure it out and give an easy explanation.

Fluids separate according to a difference of force as it's applied to the two different fluids. In gravity, this is because the more massive something is, the more its acted on by the gravity of nearby objects, so the more massive, or "heavier" fluid is pushed downwards. In contrast, the less massive fluid is pushed less and therefore hedged out as the two fluids cannot occupy the same space. As long as the ratio in force applied to the fluids is the same, at the same intensity, they will separate at the same rate. A centrifuge works in much the same way, but rather than the force of gravity acting differently on the different fluids it's their resistance to change in velocity. Something that is more massive requires more energy to change its velocity, and something that is less massive requires less. So again, the more massive fluid is pushed "down" as it resists the change in velocity from the rotation more than the less massive fluid. The ratio between how the force acts on the two fluids is the same since both ways it scales to mass, which allows for the same rate of separation.

Interestingly the force here is actually an inward force that has a more significant effect on less massive materials. The reason the materials appear to be pushed down is that at any given point, the velocity of an object would take it further away from the centre of rotation. As it rotates, however, the centrifuge applies an inward force that changes the velocity such that at the next point the velocity will still be at the same angle relative to the rotation. Objects have a natural trajectory going outwards but are being pushed in, with more massive objects being more resistant to being pushed in.

Not a perfect explanation since I tried to make it easy and simple, and there are other things you would need to pay attention to in practice, but this should get you most of the way there.
As for why being in space would actually cause there to be no soft drinks? I have a theory about that!

Its already been made clear that transport is a big deal. With pirates and the dangers of space, you don't want to transport something that is not profitable. Soft drinks easily explode at low pressure, meaning they would need to be in a heavily pressurised cargo hold, making them more expensive to transport and therefore not worth transporting. This would mean you would only be able to get soft drinks produced locally (as in produced somewhere such that it wouldn't need to travel through space to reach you, so on the same planet counts as locally in this context). On a space station space (lol) is at a premium, meaning you don't want to have anything taking up room if it isn't really valuable, so a soft drink manufacturing plant would be a big no. You wouldn't be able to export the soft drinks manufactured there because again, transporting them is expensive. That's not to say all hope is lost though, if he can get a drink carbonator, and some decent cordial he could get soft drinks yet.
