The anime really cut out a lot of stuff.

From what I understand it's the other way around - the manga added a lot of stuff, and the anime is adapted faithfully from the LN.

Not that I think the manga is the worst of the two.

That's a surprise to me. Personally, the anime give me a different vibe than the manga. As if I am consuming two different stories.

Yeah, it happens sometimes. Just look at Fruits Basket. It got two anime adaptations because the first one they tried to do while the manga was only halfway finished. I hear the second adaptation was much, much better.
