it's not that she's ungraded it's just that the system they use can't categorize her because she doesn't fit in the metrics being used
the entire conversation of the first half of the chapter is the guild girl saying that the "UNKNOWN" result was most definitely a byproduct of her being far more powerful than any SSR, that's why she told him about that story that would label her as an UR

He can like both forms, it's not exclusionary. Thus even if he likes their full adult forms he can still be a lolicon.

Also they didn't actually say what the knife appraised for did they? I know it's not important in comparison to the girls, but it's a bit weird to mention getting it appraised on then not saying the result.
