In Praying Mantis case it's been observed that biting the head off happens a lot less if the female isn't stressed, such as being observed by gigantic 4 limbed meat creatures, and as long as they're not hungry or starving.

I'm pretty sure that it's similar to black widows in that it's more "breeding mode off, regular predatory nature re-engaged" for why they eat their mates. I'd assume that the laboratory tests done that led to this knowledge had them improperly fed for mating or overly stressed, and so the females ate the males, since it only rarely happens in the wild.
