I hate arguing on comments sections of anything, but I can't let this slide.For fermentation you only need yeast and sugar and some warm water to accelerate it. No milk needed at all. Humans are not made for consuming milk of other animals and bread is not made with milk. If you add milk it's not bread anymore. T.T
I make lots of breads of different types. Milk is added to many breads as the fats are useful in making rich, soft baked goods.
We don't need milk to drink, sure, but the cooking process reduces lactose anyway. It's not about nutrition, it's about texture
