for those who want to make a crispy chicken without that method, here's another way.

season your chicken with salt, and leave it in the fridge uncovered overnight.
it will make the skin dry, which will crisp it even further when you fry/airfry it.

So did the wife never, ever try frying chicken without the flour coating? I mean, is that kind of fried chicken just not a thing in Japan or the US?
Like, what Yamaoka did was basically make fried chicken without the flour, and that's basically a completely different type of food. It's not really fair to compare the KFC-like flour-coated chicken with the plain fried chicken without the flour.

No idea. I've only ever ate it with the breading because that's how I like it.

This is closer to the street fried chicken you see in street food countries. One big wok with oil is all you need. The crust isn't the American flour batter crispy sort and it has its own great taste.

Is it better than your favoured fried chicken shop? Maybe not. But you'll probably also like it if you like fried chicken to start.

Is it better than the mushy soggy fried chicken this guy hates? Yes

I will point out there literally various recipes fried chicken recipes in America which have perfectly crispy chicken. Buttermilk, cornstarch, and pickle juice are excellent ingredients to have crispy asf chicken.

As an Asian, I feel fried chicken without the flour-coating is better, though. Vietnamese fried chicken doesn't use coating and we marinade the meats with different kinds of seasoning. I feel like the coating overshadowed the flavors of the chicken.
My parents also don't like the coating, and remove them whenever we have KFC.
