Indeed they are! While those articles focused on a movement that took hold in the late 2010s, even in 80s Japan, there are published lists of 'Best Waters in Japan' that outline where you can get the finest waters.

I'm not at that level of water scrutiny, but as someone who has tasted tap water from different countries and cities, I can see how this became a thing. London's tap water is terrible.

Nice! The part about drinking glacier water especially stood out to me because that's what Kariya was trying to convey in this very chapter.
It's reassuring to see that this appreciation is shared across cultures like that.
