This is more of a personal observation, but the Okinawan foods in this chapter feel very Chinese.
In particular is the ashitibichi. Braised pork trotter is a popular dish in Chinese communities, often cooked in vinegar for that pungent sourness. It's goddamn delicious.

Not sure about the jelly, but I'm sure those are turtle legs.

Jelly, don't know. But the black cylinder is snake for sure. A few years back, I went to my friend's home in the countryside and his dad made a herbal stew with a cobra he caught. The snake chops looked like that, just that it wasn't as black as shown here.
