Goya champuru holds something of a special place in my heart. The Japanese restaurant I used to work in had goya champuru on their menu, and I was always curious how a Japanese dish got the Malay word 'campur' (meaning 'mix') in its name.

It wasn't until much later that I learned of the bitter gourd's history, and how it was introduced to Okinawa from Southeast Asian trade. This would be how both the vegetable and the name made headway into Japan.

I do quite like the taste of bitter gourd. It's 'bitter' but in a way that's 'appealing'? I don't know if there's any food outside of Asia that carries a similar flavor profile.

Goya/bitter gourd is another thing I never tried. Or, maybe it's actually mixed in some food I've had but never noticed.

I heard many Okinawa dishes and culture have some assimilation SEA from the days of merchant Maritime..

Also a neat trivia, the Japanese word potato called jyagaimo meaning is potato from jakarta
