I love how this is supposed to be a wholesome date, but it is so terrifying because of the paneling and the character's reactions.

It really is fascinating. The date is very innocent, as well as the stuff they talk about, and they talk in a pretty healthy way as well. The only thing that makes this whole thing scary/concerning is the meta context of the panel layouts, the way focus is given to certain reactions, etc.
It would be really funny if there is nothing all too suspicious going on after all, and the author's just pulling the audiences leg

I think the mom is surprised how much her husband cares for her in some panels. More so, I wonder if this will lead to a rivalry with the daughter....

Depends, they seem to believe in some sort of delusional supernatural reincarnation mumbo jumbo, so maybe they think that the child MUST be done the "good old fashioned way" for the reincarnation to work.
