If we take bows and crossbow as an example, crossbows generally have higher draw weight. They aren't necessarily more powerful than bows though, and this has to do with distance the arrow/bolt accelerates. As crossbows generally have much shorter draw lenght they impart much less of their force to the bolt, than a bow to an arrow.

Some of the confusion in our discussion might also be due us thinking somewhat different scenarios. The scenario im thinking of is if the flying enemy is directly above the trebuchets+- maybe 30 degrees. Which is kind of where these wyvern want to be to drop their bombs. I can't see them working well as AA unless they are comfortably far away from the action. Probably the kind of scenario Van is aiming for though, but trebuchets as AA just is wrong.
Your not wrong that irl trebuchets are shit at AA, but Van isn't in the real world. TBH the way Van intends to use them, the wyvern should never be able to get above the siege weapon. And even if they did, the balista should have the range to handle the threat. There would also be the possibility of the archers/crossbowmen shooting the bombs as they fall.

On the flip side of that coin you are wrong about angle of attack. By adjusting in sling and arm(the parts that throw the projectiles) you can launch nearly vertical. Not really recommended for obvious reasons, but still possible.

Ye, it can be done, but my arguement is that the projectile will have less power and might not even fly high enough. Other obvious reasons like exploding a barrel filled with shruiken above your own army ignored.

Setting lore is that the control mages can't fly high enough to get out of range. Would also argue that even if they could, dropping from high altitudes would make hitting their targets problematic at best, and near impossible in anything but calm weather.

So anything above AA defense range would have accuracy issues and allow even secondary mages time to deflect an attack, and anything within AA range would be shot down. Would also like to add that most of these points assume that the trebuchet are firing from the ground. If they happened to me mounted on a 30 meter tall wall... the airspace the wyvern have to maneuver in is dramatically reduced.
