Are bellpeppers really such a disliked vegetable?
For me it is one of the few vegetables I enjoy eating, especially the red ones.

Red bell peppers are the color they take when most ripe. Yellow is about halfway. Green bell peppers are unripened, thus they are bitter. For many folks, the bitter flavor profile is revolting.

The ripeness of the bell pepper is determined by how long the pepper is allowed to stay on the plant. Also Red and Yellow are sweeter.

I find it funny that the one group of plants that evolved to stop mammals from eating them, making us think they're disgusting, is confusing people that some might not like them. It's a testament to human stubbornness that people eat them at all.

Bellpeppers are so good when they turn soft naturally through cooking. I like green ones better though possibly because my whole life I had been majorly consuming Green peppers over any other coloured peppers.
