The series spans central Asia so Mr. Smith has probably been speaking multiple turkic languages including Farsi and Uzbek. Even though they share the Arabic alphabet, in an age before telecommunications, differences in dialect and local vernacular are enough of a language barrier to cause confusion. The twins found it strange when Mr. Smith was taking notes, so the idea of a dictionary is also pretty alien to most people.
