Heart is not entirely to the left part of body, it is "a bit to the left", in correct terms.

If you got stabbed in the center of the chest, at most your your right atrium and big vena got severed cut. At the least chance, your oesophagus that get cut if it is higher. It's still fatal stabbing whatever the case
