White paper with a flat, even surface would be exceedingly difficult to mass produce without industrial age machines. I think you underestimate medieval paper making capabilities. To my understanding it was one of the things people learned to produce in larger quantities before the industrial revolution. Nope, cant say we've watched the documentaries, but information shouldn't be too different. The biggest issue is that no matter the process, its both time and labor intensive.
