The description of those birds was dubious: they are born white and pure, but years of filth and bad living habits turn them black. There was no need for such a ridiculous explanation. Birds often aren't the same colour as chicks as they are as adults. As for why he turns the feathers white for the bedding purposes, just make it a side effect of turning them soft, via his own magic. To make something suitable for body armour so soft it makes a luxury bed, it makes sense they change a whole lot structurally, so the colour changing wouldn't be that odd.

This author isn't the sharpest beak among the various birds.
