Her parents should have guided her more to stand on her own and his mother should have taught how to give gifts and to look after his fiance. I'm guessing he did, actually. The note with Viola's birthday gift sounded like an attempt at reassurance that he loved her despite how Karen had poisoned her mind. It was also probably the reason he took initiative to investigate her this time around, so he could stop her from driving Viola to despair.
Still, as you pointed out, REALLY weird that he wasn't at least hesitant to be in a relationship with a girl that killed him before.

This kind of reminds me of time regression stories before the isekai and villainess genres popped off (not entirely, cause some tropes are still there). I think if this were a full manga, I'd like to see her still have some of the yandereness that led to this situation to begin with
