There usually isn't. But there is a hierarchy to it. For instance, if she promised a dance to someone else, then priority goes to that other person. If someone else also asks at around the same time, she has free choice to choose who her dance partner would be and can effectively deny everyone else. Not postpone, deny. If she is already spoken for, someone's fiancé/wife/lover, she can also deny without being rude. However it's typically seen as "not becoming" if that dance request is from someone of higher status despite everything I've already wrote. A woman of higher status of the guy asking, is completely free to deny his dance request.

I guess this isn't the weirdest etiquette/societal rule humanity has ever had, but it seems rife with potential abuse.

But the main reason for those rules are giving and saving face, reputation means more than any individual's comfort.

Olivia got teached how to use REAL magic and not just sorcery like the mekia church guys. Sorcery is like a downgraded copy of magic. Basically they can only use magic from their own body, which isnt much often times and can even kill them if depleted, while Olivia can use the magic that is in nature around her. Be it magic or with the sword, they are completely inferior to her in any way.

I kinda expected this since in the earlier chapter we have Olivia actually practicing magic. But we still don't see it in action yet.

Possible. Some sword techniques are quite dance-like, which is why a number of sword masters tend to pick up dancing quickly.
