Kenji Lopez-Alt, a fairly renowned individual in the food world has a well-written article about how Foei Gras, despite it's reputation is not intrinsically "unethical", unless you consider meat unethical. Give it a read.
To summarize: It's possible to raise ducks humanely, ducks raised gently have higher grade livers, tube-feeding a duck is not painful since a duck is just built different (they swallow spiky fish in the wild, a smooth tube is easy in comparison), and their bodies are made for gorging (for migratory reasons).
It's just one article but Kenji Lopez-Alt has a good reputation. Not all Foei Gras is ethically raised, but foei gras does not have to be unethically raised.
