Another thing that rubs me the wrong way with this webtoon adaption, apart from the general changes to the novel, is how Suho is depicted I think.
His dad's been one tough, cool guy from start to finish, hands down. Not that Suho doesn't have that side / those kind of moments - but in the whole he's a bit more... fun? Quirky? In my opinion the novel got much more of a humoristic side compared to it's predecesor.
If one was to wanting to read the novel, where would one start looking for a copy?

I think you missed the point.
What OP is saying is that the webtoon is omitting these quirks of Suho in favor of presenting him as Jin-Woo 2.0, and that's what is rubbing them the wrong way.
See, that's not really clear, it seems more like a statement about Ragnarok vs the original since they mention the series's predecessor, but I can see what you're saying 🤔

no one has a problem with the poorly written exposition dialogue between the demons? explaining something that you were all there to witness is so unnatural? it's like you go out to lunch with a friend, and just as another friend is about to join you:
"that lunch we had at the restaurant around the corner sure was delicious"
"yes, i very much liked the sandwich I ordered, I almost ordered the soup. You said your order was delicious also? It sure did look delicious"
"yes, the blonde waitress who works at the restaurant around the corner where we just had lunch, kindly suggested the salad that i ordered. indeed it was delicious, and I am also glad the sandwich you ordered was to your liking."
"let us continue to converse as head to our next destination together about the important work we must do next."
