Hmm, I know it's just side story, but I don't get where this is trying to go.

Nowhere to go, really. This is just the victory lap after the story ended. Slice of life arcs, character backstories, future developments.

It may not be super exciting for most, but I think people are just meant to enjoy these novel epilogues and bonus stories as is.
