people want to eat parasite infested fish? they'll regret that real quick.
People eat maggot infested cheese (even though there's a good risk of infection with some serious pathogens they may carry) and call it a delicacy, it's nothing new under the Sun. Compared to that, meat infested by a single creature is tame.

that cheese i did heard about... mostly bad things. you need to be damn careful to eat that cheese or you will have a "fun" trip to the hospital.. it is hard to the stomach and can actually kill you.

Oh, that's the fun part: casu martzu (the name of the cheese) is only considered "safe" (there's still the risk I've mentioned) to eat when the maggots are still alive. They also have a habit of launching themselves a good distance into the air when moved. I've seen people eat sandwitches with the stuff while holding their hands in front of their faces, so they don;t get into their eyes...

What brave soul decided to try eating that parasite infested fish for the first time?

I guess humanity's urge to consume never changes.

That's not the weird part. Seeking new sources of food (by trying anything you can fit into your mouth) is evolutionarily profitable, other animals do it too. It's the fact that some keep eating things that are plain dangerous to them is what's weird.

there's also stinky tofu (tofu fermented with mold), virgin boy eggs (tea eggs but with piss), bird nest soup (very literal), Balut (unborn bird), Kopi Luwak (coffee beans pooped out by a civet). Lots of these and other less odd foods probably originated either from starvation or from anitquated medical knowledge (don't quote me on that) But the Kopi Luwak stands out from my examples since it probably originated from the animals eating the good beans being a kind of a natural quality control
(don't quote me on that either). Though as you can guess from exotic foods being exotic there's definitely a force feeding the animals beans happening here and there to meet demand :shamihuh:

At least some stem from superstition, the eggs in particular - it's (thankfully) only a local "delicacy" in China, but people there believe it's a wonder-food with medicinal properties. I still gag at the though of those giant pots of boiling urine...
