My big issue with this is how the time-skip now jumbles the power scaling. He underwent all of those YEARS of training in a hostile environment to now get cut up by some demon possession? I get it’s the end boss but WHY is there a challenge here, right?!

Well in MC's defense, he didn't really know how many horns are per social standing in Demon Society.
It could have been possible that for 5 horns is just a high level noble, while 6 or 7 horns could have been royalty.
While true, there is also the fact that Demon's apparently follow Monogamy, as seen with Prince of Darkness and his Wife.
So, it's unclear how things would go with her.

From the WN, iirc. Demons don’t have more than a certain number of horns. Only royalty like Lizabeth have 5 horns. I think the Demon Kings/Lords usually have 4 horns. I believe the rest of demon kind 1-3 horns.
Cain only knows about Seth since he’s a Demon King/Lords but is completely ignorant of the whole demon kind culture as a whole.

It gets revealed that the Demon Empire has a Demon Emperor that rules over all demon kind, while the four Demon Kings/Lords supervise over one of four territories of the Empire. These Demon Kings/Lords are often selected for their power. Cain is asked to go since his power is like well above anyone and demon kind listen to those who have the power to back up their words. Seth basically has Cain destroy an island with a giant meteor to prove his power, Seth also gloats that despite Cain using a giant meteor spell and another spell to stop the tsunami, his power is almost endless. All to make sure that the demon nobility obey Seth and Cain in preventing a war between demon kind and humanity.

Part of it is probably a TL issue cause early in the story we don’t know much about demon kind. And maou can be translated as either Demon King or Demon Lord. So it could be assumed that Seth was the highest rank at the time. Lisabeth outranks Seth since she’s a Demon Princess, so most likely we would go with the Demon Lord. Since later it is revealed there’s a Demon Emperor since it’s an Empire.
Well, the official translation goes with "Prince of Darkness" as the title for Seth.
Also his wife is apparently the daughter of a Duke in Demon Society and seems to be of higher position than him.
