My guess is that she's the one that poisoned him as no emotions when he collapsed. She married him to steal his land by having a kid and for it to be the heir but couldn't manage it. Backup plan was to poison him so he's around but incapacitated. Problem is that she fell in love with him and now feels immense guilt to the son.

Taking bets on her being forced to do it by her scumbag father and the dad somehow recovering so its a happy family again...

Since they said they couldn't find any poison, maybe some kind of dark magic/curse thing.
Which is maybe why El need Rurin to go to capital, he might be dragging/bullying his junior mage in to take the stage again.

It's becoming more and more obvious that El has many connections. Kind of odd how such a well connected guy is seemingly unknown by powerful people. Surely someone must be keeping track of him moving out to some nowhere town, right? Especially since he's involved with dragons, and now dwarves!

hes not unknown at all in fact he is very well known. It's not like they have the internet and can just see a picture of him so they more than likely know his name but not his face

Okay, so it wasn't a diet. Though the introduction of this arc was kind of abrupt.

If the Countess seemingly now opposes her father, and what she was originally sent for, is now acting on her guilt, then perhaps...

At this point, she might be considering that she's at a point of no return, and the only thing she can do is to bring her father down along with herself. If those documents are genuine and cannot be disproved, assuming her emotions were genuine and she really came to love the Count and her stepson, she might be thinking she's in a corner where this is the only way she can make amends. By foiling her father's plot, and allowing herself to be punished for her part in it.
