Sometimes simple foods are best. I can imagine the taste of the grilled saury in my mouth... plus a good junmai sake...

Do note that he is smoking (i.e. curing) the fish, not grilling (roasting) it. It's done at a low temperature and needs a lot of time to thoroughly infuse the meat with smoke (0.5–4 hours depending on method and circumstances). Entirely different process, entirely different taste, and it produces a lot of smoke which probably won't make you a lot of friends at a public park. This is something you cannot get out of barbecue charcoal since it's almost pure carbon; you need fresh wood of certain varieties to produce tasty smoke, like alder, oak, fruit-bearing trees.

@moozooh Dude... He's not smoking it. He's grilling it, using whatever twigs and cones he gathered from who knows where. He set them on fire and placed the fish on top of them, on the metal grate. Sure, it will produce a lot of smoke since he has such random stuff he's burning. Smoking, however, is a totally different thing. In the first place, it's never open like that (it happens in a container of some kind, with the flames under the container, in hot smoking at least), and it typically relies on indirect heat to make stuff smolder, to produce a lot of smoke from suitable wood material, but also keeping the temperature somewhat limited (even very low, if it's cold smoking). Satou is keeping the fish on the grate right on top of the open flames.

I have eaten plenty of smoked fish in my life. Just a couple of weeks ago I was lighting the fire under a smoker to make delicious smoked salmon.

Where do you see open flames there? And no, it doesn't need to be a closed container as long as the smoke goes over the meat. The Wikipedia article I linked earlier has examples right there.

Also, nobody cooks fish on top of the open flames, that's just idiotic. If you're roasting fish it's either placed over smoldering coals (which Satou obviously doesn't have there since twigs don't produce hot coal; you need chipped hardwood or pre-made charcoal for that) or some distance to the side so that it doesn't actually burn (not possible with a pot so small). Never on top of the flame, it'll ruin the fish.

@moozooh You might be correct about not wanting to ruin a fish, but nothing in the chapter looks like smoking. I don't need to read Wikipedia to know something I've done, myself, multiple times in my life. That being said, I'm not sure how much heat twigs and cones are going to produce, so it's possible he won't be burning his dish. If he had good wood burning, he would obviously need to take the fish further away, like you'd make flamed salmon. He's just burning some trash, though. They might be severely lacking in joules. It's not like I wouldn't have ever burned twigs and even cones. They are good for getting a fire started, but if you try to heat up your sauna using only them, you'll be disappointed.

I have a feeling the whole thing is a joke in the sense that usually you see the setting in the chapter done with proper charcoal. Satou just is so wacky he won't go buy something like that, instead he fetched random stuff from the backyard or a nearby park.

Edit: Actually, I'll have to admit one thing: I keep forgetting the Japanese love eating raw fish, so for all I know, Satou could indeed just want to have a bit of smoke flavour on the skin and otherwise perfectly happily eat the fish raw (and wriggling).

The thing is... the Japanese grill/broil it with salt (sanma shioyaki) or grill/roast it over coals (sumibiyaki) (-yaki also means over direct heat). It's a fantastic dish during autumn. I'm pretty sure they don't smoke saury... (they do make katsuobushi from smoking skipjack tuna, but that's a different thing).

Also, there is charcoal or some sort of hard wood (see bottom right panel of page 16). Sure, maybe he's using some hay or dried grass for a little smokiness, but probably more likely its main purpose is as tinder, since he's using flint and steel (his knife in this case) to light it. Like one might do if you have experience in wilderness survival or camping.

Fable's fanboy is the one who introduced Misaki into this mess, don't get disillusioned because he's fantasizing about MC. MC killed doctors and CEOs, he's not a good guy either. He just wanted to repay the kindness of someone who reached out a helping hand, and probably has feelings he can't understand (like/love) towards her. That's being principled, and he couldn't have survived without principles and discipline.

Don't forget the MC is a bad guy that took out an another bad guy. We've only seen him take out bad guys so far, but that doesn't mean he's good (knowing his past, we know he's bad).
