Because the English in the credit page is how I speak. I don't give the characters lines how I would speak but translate what they sound like in Japanese.
They constantly use colloquial grammar that wouldn't show up in formal writing easily in Japanese and I reflect that by making the translation sound similar.

I don't let them speak how I do; I let them speak as a suitable English analog to how they are speaking in Japanese.

Hmm... While that makes sense, what's weird is that girls going ".... Man." it feels totally off. I can imagine a young guy saying "... man" but it's a bit rough for a girl to use it, especially if the girl works in a high society establishment.

Well, you'll notice they don't use it when dealing with customers. They speak very differently among each other than they do with customers.

Another thing about Japanese fictional dialog is that it's generally cartoonish and over the top. The lines are specifically written no doubt to draw a contrast with how they speak in front of customers and among each other because Japanese people like to criticize their own politeness norms and how differently speak in private opposed to their public face so it's exaggerated even in the Japanese lines.
