They definitely take the souls from fushi to keep them from being immortalized but also to use them as bait. There is probably a mechanism to release the captive souls (maybe to die in a manner that doesn't allow black hood to recapture them).

So what I'm trying to say is: Knocker dies far enough away while holding one of fushi's souls--> it's released and fushi has no way to get it back maybe idk lol
