Never tried marinated ginger, but a soft cheese works pretty good. I reach for flour tortillas and milk if it's too hot.

Marinated ginger is usually served with Wasabi when you order sushi. Wasabi being a kind of mustard, it does the same thing as dairy for spicy stuff, oddly enough.
