One of the reasons why it's rare to see freshly-baked melon bread, even in Japan, is because the biscuit/cookie dough on top won't adhere properly to the bottom bread portion until both have cooled down sufficiently. If you eat it fresh, the top tends to turn into a crumbly mess right away or separate into square cookies.

IIRC Yakitate Japan had a commentary on this problem that Azuma's cheaty-ass solution kinda just skirted around.
