I think Cang is the manager (the white snake hair lady), and Jiu is the black snake lady behind the counter (at least that's what the previous chapter implies, otherwise I wouldn't remember the actual names ) It's still unclear to me if they're actually sisters or it's some kind of courtesy thing but it was implied earlier Jiu likes the manager.

No idea, not going to be easy finding it with so many chapters It was just a couple of minor scenes at the bar, they could be at any point of the story.

It was probably in the first few chapters where our mcs were introduced to the bar. Couldn't tell you which chapters exactly.

No I mean what is she physically. Jiu is a lamia and I thought Cang Cang was a Medusa, but it turns out the snakes aren’t actually a part of her. Is she a human with some kind of snake based magic?

Why can't Medusa's snakes have a mind of their own (especially in a throwaway doodle at the end ) We're not following mythology to the letter here.
