@MrMichael Japanese mayo is different from American mayo and complements fried dishes very well, since it’s made of egg whites vs the whole egg. Some say it’s healthier too (especially if it’s homemade). If you look up okonomiyaki or takoyaki, it’s that white sauce on top that contrasts the brown
