Bamboo shoots are fine, their texture is similar to palm hearts, but it's a hassle to prepare, given that it has little to no flavour. Most of the food presented there could be prepared perfectly fine without them, as bamboo shoots basically have the same flavour as the food you cook them in.

I've personally never been a fan of bamboo shoots. They're... Fine? They're crunchy and definitely add an interesting mouth feel to a dish but maybe I haven't had good bbamboo but my opinion is more akin to the girls at the start of the chapter.
