Never had mapo tofu before but there is a stereotype of white ppl not handling spice (altho other than mapo tofu and some korean spicy foods i don't associate asia with it either, at least in JP with sweet/mild curry versus spicy indian kind)

maybe he should've made a mild fried tofu ver too but i guess this is more interesting storytelling wise

Reading up on Mapo Tofu, I guess the reason he's suggesting to take another bite is that Sichuan peppercorn has a numbing effect which is meant to help handle more heat.

The princess has already accused him of destroying her tongue so asking her to take a second bite to confirm that that's indeed the case is pretty bold... I guess the hope is that once she can actually enjoy the flavours of the dish, she'll forget about that.

If she's not used to spicy food, you may expect that she'll have an upset stomach afterwards though so again, very bold to bet on a spicy dish. Perhaps he's calculating that most cooks wouldn't dare serve her spicy food precisely for such reasons and that this may be a novel experience for her.

Mapo Tofu is pretty good, I've only had a few oppurntunities to try it since not many restaurants serve it unless they are Asian ones, but like even the few ones that do usually really tone down the spice for the average person.

Long time ago when Japanese people first tried chili peppers, they thought it was poisonous, so as a part of their invasion of Korea they spread chili seeds on Korean crops. It clearly backfired as Koreans love spicy food.
Also, the myth of capsaicin destroying taste buds fails to recognize the numbness from spiciness is temporary.
For a gourmet, losing one's taste buds from food would be akin to being poisoned.

Honestly, it feels dumb to serve any important person a dish without asking their preferences, and even if they said "surprise me", warn them about something like spice levels; with literal royalty, that seems like a great way to get killed instantly when they're surprised and cough when putting it in their mouth.
