I suspect that the "saintification" process does something to warp their personality, I think.
We don't know when she became a saint. Whether she became a saint before going crazy or after.
We also don't know if there's just one goddess. Maybe she was chosen by an evil god and people were only able to tell that she met the criteria to become a saint.

Well, she was left to be raised almost entirely by the wet nurse. I suspect the wet nurse implanted some superiority complex on accident by continously calling her "a genius" or something like that and after her father left her to her own devices with unlimited power resulted in this.

Uhh, is that the correct translation? Because if it is, that means the father thought about raising Jelly from birth to marry her and replace his late wife?!

Born sweet, started to be refined being sweet, took a huge wrong turn to spoiled vinegar, to eventually becoming rotten. Sainthood just twisted the idea into "I'm a saint means I can do whatever I want and no one can say otherwise."

Goddess probably assumed it was the usual trial and tribulation via death by poison and see if she survives and takes that as a lesson to be reformed. Possessed by a sweet slime is likely "Eh, close enough."
