I call BS! Chicken meat is not so different than other meats that it can't be preserved. Salting, drying, canning,... they all work just fine. And bacon and sausage are not the only preserved pork products.

It is a little more finicky to work with on account of the risk of salmonella and other diseases. Probably wouldn't really be worth risking it in a largely medieval setting.
