I've read the light novel pretty far. The arc they will be adapting is one of the slow ones, but it's still going to be great.

if you mean City the Animation, i watched that as it aired and it was great. i've seen Hinamatsuri (would definitely watch a s2 if that ever happened). dorohedoro fell off about halfway through the manga and i think s2 will cover just up until its decline. if there's a s3 it'll suck
