The reason medieval knights never conquer Japan was because none of them knew it existed. Also because of the shit quality of iron that exists in Japan a knight in a full suit of plate armor would basically be Invincible to a samurai because they have no real way of getting through the armor and shield. Also I just want to let everyone know that in real life Katana blades were usually folded between 8 to 16 times.

From our point of view sure, but Kinoko is so far from what you would expect to see from a powerful fighter that people's biases prevent them from even considering the possibility.

Kinoko already knocked herself out of contention as a candidate through sheer incompetence.

Eiri's a weapon master and so seems to be assuming that Unknown is also a weapon master, or perhaps a universal combat master. The possibility that Unknown has never used a weapon before would never occur to Eiri.

Hell, the possibility that Unknown is just a Saitama-type with infinite physical stats also wouldn't occur to her.

Samurai were even weak against the Mongols during their 2 invasions. The samurai were wrecked when they directly faced off against the Mongols, so they switched to guerilla warfare and being behind fortifications, where they had more success.

The main reason why the Mongols first invasion failed is because they chose to bring their troops back on their ships, only for a typhoon to wreck the entire fleet. The second invasion was the fault of the Mongols lack of actual scouting to figure out the Japanese had built walls where they planned to land. They could have simply moved to another location, or have invaded Honshu. Instead, they stayed in front of those fortifications, where they were constantly harassed until the second typhoon came.
