It feels they leaned into the whole " Its LAVISH" thing and like.....I much prefer a dish anyone can eat over something like that. Kinda reminds me of the longevity bout where Kaibara DID lose because ultimately his dishes were kind of longterm not viable for most people except the rich. This time..he wins cus hes rich and can afford such ingredients. ???

but like...do we find out Kaibara's like...origin? Is he from a rich family? Did he work up to it?

See, this is the loss that I wouldn't mind so much (apart from the ridiculous glazing and acting like Kaibara completely outplayed them like a fourth-dimensional chess master when he just presented a better tasting dish) if it weren't for just how damn often he wins for worse reasons or draws due to "giving" the Ultimate Menu a clue or deliberately sandbagging. But since that does happen and we are getting excessive glazing, it's just annoying. I seriously don't know what changed between the start of the manga and where we are currently that led to him having such a drastic change in perspective on Kaibara, but it will never not be frustrating.

Surprisingly fair verdict. Surprise Toyama doesn't pull bullshit. I thought he would probably said that both of them are unqualified as both of them purposely choose to make cooking that spite the enemy instead of making the best cooking

Yes, we will to some extent, (though we won’t see his parents or early childhood, we will hear about him as a student) but it won’t be until very close to the end.

Yamaoka dish is literally just fried fish with a beer batter. It being Australian hardly even matters. This chapter feels rushed, both dishes are extremely uninspiring.
