Probably they wanted to give time to everything else, and end on a more dramatic note than "and the OGMC fought desperately, yet still got beaten within an inch of his life by our POV character".

Doing it that way helps sell the fact that he hadn't been able to dominate his actions as completely as he thought and how big of a problem it is, compared to selling the fact that the OGMC is no less of a slouch because our POV character got stronger. That can be sold in any other combat scene, for example in the one we just got dropped into at the end of the chapter.

She becomes a teacher as expected. A tough one but fair and You'll see her also give attention to Cynthia since she becomes nervous of being useless to Weiss so she helps get a powerup which Weiss had never seen in the game.

Also Milk is a harem candidate unfortunately she gets a limited amount of romance moments since Cynthia and Lilith have like 90% of all romantic moments while Milk and the other girls get the 10%.
