I prefer Hiroshima-style, but it's more delicate because everything is layered so it can fall apart when you eat it.

Brantano has it right tho, whichever style you pick you absolutely need a mug of beer or three to go with it.

My family visited Japan last month; all the food was incredibly delicious but my absolute favorite meal of the trip was the Hiroshima-style Okonomiyaki we had during our day trip in Hiroshima. Normally I’m someone who hates the texture of cabbage, but the okonomiyaki was super tender and incredibly flavorful.

Yeah, I was thinking she looked quite a bit taller than I remember, so much I wondered if there was a time skip between chapters.

When I had a Japanese housemate, she taught me how to make okonomiyaki. Shred some cabbage, throw in in some batter made with water and AP flour, line a frying pan with bacon, ladle the batter over the bacon as soon as it starts to sizzle, let it sit until it starts to cook enough to hold shape, then flip and cook until done, add bonito shavings, okonomiyaki sauce, and Kewpie mayo.

Still one of my favorite things to make.
