japan has the most michelin stars in the world, last i checked, 230ish?
they have the most 3 stars as well.
they make italian/french/american-"fusion" just as good as the home country.
this whole, oh xyz ethnicity cant do it as well as my ethnicity, cheap provocation in todays dining world.
i know of some restaurants in tokyo that even import the water so its literally matching the terroir difference between japan/xyz home country so it matches the exact taste, which isn't hard. especially for simple dishes.
anyway.....of course not ALL restaurants can reach that pinnacle....but the japanese twist is just as good and they also have to cater to japanese tastes.
