That's because she reincarnated in the very same life. It's closer to what happened in an anime called Kasimasi Girl meets Girl.
Alien wanting to learn more about earth land their ship in a place far from the city, but unfortunately they end up landing on top of the mc, effectively killing him. Using a form of bullshit science they manage to revive the MC by using his fate as a coin of sorts and purchasing a new life(it's a really weird process so I'm trying to explin it in a way that can be understood), they pretty much do somthing that is akin to reincarnating a person as thier own selves, since his fate as a boy ended in the process, he is revived as a girl. But Aside from his body he returns to life as himself, his memories, his likes and dislikes and all. Which is extremely similar to what happened to Mai. That's why it's more of a reincarnation than a mere gender change.
