I know the Japanese are really proud of their chef knives, and they should be, they are good, but couldn't a bloody child be given a regular peeler instead when peeling a potato? You gain absolutely nothing by peeling a vegetable like that with a big ass knife, so it's only pride talking.

I'm not Japanese, but I don't like using a peeler. I don't feel comfortable using them, and I find it easier to use a knife (whether it's large, small, or a normal size). Even when I've worked in a kitchen, I've always preferred using knives to peel things rather than a peeler.
So I don't think it's a matter of "pride"; maybe his mother doesn't like peelers and doesn't have one at home.

If you have worked professionally in a kitchen, you are overqualified to evaluate this case! You'd probably do it faster with a simple knife as well, even if you didn't dislike peelers. However, that's not really the case for laymen. If you aren't highly skilled and try to be fast with a knife, you will end up with red potatoes with a distinct taste of iron.
