That wasn't the point, it's not like they're in shortage of sugar replacement. There's bee farms that farm normal honey that people can use. Monarch honey is just higher quality/better tasting/whatever and Yoishi wants to share that with more people.

The problem is once someone eats the Monarch honey you can't enter the dungeons to hunt because the bees would attack you. Yoishi just wanted to make it easier for more people to eat without risking being out of job for months, since a big majority of the people there seem to work as dungeon explorers..
