Personal experience is that it can be alright (Mostly if freshly baked, cold bread is only tolerable if it's crispbread).
It very much sucks that Gluten is shit, while pretty useful as a glue protein.

Wheat Starch I avoid, Psyllium is very useful for baking bread or making dough for noodles
