Why is she even doing this? She got everything she wanted; she's a saint, she has her handsome boy harem, she has everyone doting on her, there is literally no reason for her to go out of her way and attack the MC and the 'villainess' other than for just the sake of it...
If so, she really deserves her upcoming harsh retribution.

Because she hasn't achieved the victory condition yet. In a game, when you win there's pretty much no one left to oppose you. Here there's an entire new nation rallying behind who she considers her only true enemy. She most likely thinks he, as a recincarnator would also eventually go after her, since there can only be one "winner".

Fair warning: unfotunately the best ideas are far behind us in this story. Amy was never a richly written character, but from this point onward she's flatter and more one-dimensional than her chest, with deus ex machina powers again and again, one after another, for both sides. Both the story progression and it's resolution are unsatisfying (unless perhaps you're a sadist) and feel mindless.
