For those wishing for spoilers on Snow, Rei and Hiiro's past:
That Hiiro is from the future.
The reason Snow was an unknown character to him is because it was he himself that got Snow into the story, but he will only find out about it when that future becomes the present, of course.
So Hiiro has no idea about a story that Rei and Snow are aware about, and it also reveals a bit of Snow's trust on Hiiro (so long as she understands it's the good one, not the bad one.)

Snow herself is vaguely aware of it, she doesn't understand, but she understands when past Hiiro told her that "tomorrow's Hiiro" would be a completely different person.
There is an event in the future where Hiiro responds to Snow from a sentence he said in that moment, thus Snow came to learn that the Hiiro she first met was truly back again.

To Snow, there are 3 Hiiro's:
  • The first one she learned is the one that saved her
  • The bad one
  • The first one again, but for some reason he doesn't know her, so it's confusing.
I noticed the WN has the poligamy tag in NU. Did he got engaged with multiple girls against his will somehow or what?

Just in case it was missed, this is not a Yuri story, this is a harem story inside within Yuri game.
All the Heroines fall for him + extras, and we have cases of forces marriage deals with him.
But as you guessed, they are all against his will, the only one that he initially accepted is Snow's, and that was because Snow suggested that, if she married him, he could use that as an excuse to refuse Rei's advances, although it's also used against every other heroine too.

The game's heroine is the one most interested in Hiro, and unlike the other heroines, she doesn't have a "background" tying her, so she usually tries to get alongside him.
- When choosing the dormitories, Elf and Sister girls want Hiro to join their dormitories, however, he was planning on the third one, and the Heroine Sakura followed up at him. You can see from her personaliy that she is quite forceful, a more masculine trait, but that's likely why she is the protagonist of the Yuri game.

After literally dying... And "reviving", he learns of the sad endings of the heroines, one of them, the elf girl, is goig to have a polítical marriage, she had brushed it off because of Hiiro, but she became depressed, dropped school, and gave up on everything. Hiiro, not accepting that she would be forced to marry some random guy, used his new powers to rescue her in a movie-esque rescue scene, with her being so happy that he is alive. Soon after he finds out that she was going to marry a girl, and he regretted saving her.

Then we have the official fiancées.
  • One of the initial "enemies" he faces is one of the older sisters of the dormitory head, she literally tries to kill him, later, they fight against a Devil and both of them fall to her attack. They are transported into a fake world where they are supposed to be happy, but Hiro, knowing how to defeat the devil, makes a plan, but she doesn't believe they can win, and many days pass like that, she falls in love with him, and wishes to stay in the fake world. He fights and then she joins him, defeating the Devil, and with that, they would lose their memories of this time, so nothing would change... But Hiiro has a Guardian Angel with him, who makes a deal, and she does not lose her memories. Starting from that day, she becomes extremely supportive of him, and since Hiiro properly lost the memories, he finds it pretty scary.
  • Later he defeats a super assassin on a level similar (but inferior) to Astemil, he is able to make the dorm leader, who was deemed useless, to be capable of fighting, and defeats the family with the two sisters. The mother is extremely happy and gives her two daughters to him. The super assassin became his older sister, and she is super protective, cuddly, pampering and any stereotype of onee-chan that you can imagine.
  • He goes back in time, takes the body of a dead ancestor of him, not knowing his own name, he just uses his own name, and helps the ancestor of the Margelline family (grandaunt of Ophilia), she helps her, and said grandmother falls in love with him. However, the original person was dead, and Hiro is from the future, it was a love that could not be, she never remarried, but her actions built the present, to the point that the family is important. Back to the present, they defeat the devil, and the matriarch of the Margeline family has 3 marriage documents, for the 3 daughters (older sister is super dramatic, but Hiro relied on her during his period of time in the past (just after saving Snow), Ophilia herself, and the younger sister who is a Magical Girl (Magical Girls are incredibly strong girls, it's said that 3 magical girls can defeat a Devil [An entity that CANNOT be defated normally]).

- Among the devil followers that Hiiro inherited, one of them, a former classmate small time villain, likes him and is very tsundere.

- The Devil within him has sometimes been able to use his body, mainly when he goes unconscious for some reason (like after a fight), and she acts in ways that he deosn't know, and she won't tell him if she did anything. Later for example, we find out she essentially seduced some girls, and the girls are pretty much super fans of Hiiro, who started a religion with the devil as his Guardian Angel (they don't know she is a devil).

Of all those things the one I expected the least was
Chris and Muel happily being givinen to Hiro by their mother (I suppose is because he made Muel useful but still). Honestly I can't imagine myself liking her with the whole basement thing with Chris and Muel in general.

Chris changed significantly after they defeated the Devil to the point that Hiiro thought she was planning something extremely evil against him. She knows how she treated him in the past, so she is very understanding and cooperative.
Mule is just a kid, she was kinda added as a bonus, but they really did work hard with her new found power (which is not OP at all, and she is still heavily limited for fighting).

The main reason is the main family. They had an older sister who died (the one that assassin girl protected and loved), and the Elders of the family were forcing the mother into doing what they wanted (Similar to the Sanjou family with Hiiro). Hiiro's actions with Mule (and Chris) allowed them to overturn the rest of the family, so the mother was more than happy to have Hiiro, the man who changed her youngest daughter, into the family.

Ah, and now I noticed I missed the main part of the Margeline family history, thought I had written it, but now that I see, I did not. the reason why all daughters were forced to Hiiro (Despite the oldest and youngest not really being that acquainted with him):
- Their grandaunt, who never married nor had children due to her love for Hiiro, and he did tell her it was impossible, because he is from the future and stuff, essentially left a message: If you find Sanjou Hiiro, be sure to tie him to the family and don't let him escape.

The love story between Hiiro and this ancestor is an epic and sad one in the end, Hiiro leaves lying that they will meet one more time before the final battle, where he "dies" and returns. Ironically, although it was his intention to lie, they did see each other one more time, for a very brief time during his battle against the Devil (Nanatsubaki is the name).

That is why the ancestor of the Margeline family was very explicit in "if you find Hiro, make sure he doesn't escape again."

We do have a funny scene where the 2 families, Margeline and Mule/Chris' family (forgot the surname) meet each other, both claiming their own posse over Hiiro in a not amicable way.
