Damn, she's really going for it, she just outright said it, I didn't expect her to be so aggressive so quickly (even if it's only a little)

It's not uncommon, although it's the same term as the one for "father-in-law" as well, making it a wee bit more common.

Didn't he already confess that he love her? Why are they still acting like they are not official?

In raws it was "義父" which ai translated to "father-in-law" but it can also be translated to "step father/dad" depending on the context (according to ai ofc)

Other than this in light novel, it was translated to "step dad" (which I assumed was human translated even if it isn't official translation)

I was confused too, because I think in anime she called her "uncle"(subtitles)? (I've watched anime before picking up the series. About a month or 2 after finishing the anime so my memory is kinda fuzzy). I went with step dad, 'cuz of ln.

There wasn't an official confession. It was a "I like you as more than a friend but unsure if it is sibling like or like between a man and woman." This ambiguity is where they are at and there is logical hesitation in "what if he/she just likes me as a brother/sister and I ruin the relationship by pushing it to be more" on both sides.

Dad failed when Saki asked him what he disliked about his wife.

You never EVER say that you dislike something about your spouse, because if you do, you will start thinking about them in a negative way.

Instead, reframe the annoying things about your spouse into neutral terms. Like if your spouse is messy:

My wife is a perfectionist, so when she cleans, she does a super thorough job. But that also means that cleaning is a very time consuming chore, which she often puts off until she has time, so junk accumulates.

Fortunately, I prefer to clean a little at a time, so I just 'spot clean' the house, a little at a time. And between the two of us, we keep the mess in check.
