I really like the ones where death isn't the penalty for losing each round. More room for crazy tactics and recurring characters. Part of what makes most of Liar Game and Kaiji's first arc so fun. Usogui has a lot of these wacky survival game contests too, and mixes in a whole lot of different subgenres to boot.

Some more "vanilla" survival game stories. Vary a lot in quality, but all fun and complete or murdered:

• The Shadows of Who We Once Were
• Birdcage Castle
• Heroines Game

Honorable mention to the insane harem protagonist death game series.
