Her being single made me wonder that too and running into other single mother candidates might make it more likely. Though in chapter 12 she said she was 24, since he's 15 she would have been 9 when he was born and her profile pic was of her current age so he would have been born 15 years later and maybe due to the butterfly effect she never met the potential father and settled down.
Since she was Medis' instructor the kidnapping incident may have had a ripple effect on her, maybe she originally would have retired after Medis died.

This is arguably the first interesting thing the manga has done so far. In any other series, it would be an eye-roller to find out one of his parents were powerful. This was a subversion since he was given the choice of mother and enraged about only powerful women as choices. Then, he was given a normal mother as an option. The deity who reincarnated him must have a sense of humor "hehe I'll give him a normal mom, but he wont know his dad is actually epic lol xd"

my theory, considering how awesome MC's dad is, that MC is the one who dictate who his father would marry and have a baby. just parallel world type of thing then MC went into that world with that kind of choice

If the father is such an absolutely amazing genius, how come Akira was kidnapped so easily and he & princess had to save themselves and defeat the evil cult on their own? The old man being such a legendary figure came out of the blue and has played zero role in the earlier chapters. But then again, maybe he's just similar to Akira and would rather appear to be a nobody, hiding his real power, to the point of allowing his child to die. Though even Akira didn't go that far, as he ended up revealing his power to the princess.

So basically the MC was always destined for greatness, no matter which mother he chose whilst reincarnating. He had five choices; four of which guaranteed him stuff like, fame, wealth, noble status, imortality, etc, whilst the fifth gave a common birth with a loving mother. MC chooses the last option because he wants a quiet like, but twist actually his is a genius prodigy level mage.

Kind of a fallacy of choice, or at least "But Thou Must!".
